Apple, Walnut, Cheese and Honey Salad – a basic recipe
I’m a firm
believer that when it comes to salad, there should be lots of ideas, but not
many recipes. Actually, I feel that way
about food in general, but salad is a particularly malleable one, in my
opinion! Salad should just be filled with
whatever crisp, delicious, perfectly ripe fruits and vegetables you can get
your hands on that day, and adjusted to your tastes completely. Still, every once in a while, I make a salad
that makes me consider writing it down, and reminding myself to make it again. Last weekend, when we were visiting a friend
outside Lille ,
we ate one such salad.
It’s a
pretty basic recipe (and is really just an elaborated twist on the normal honey
and goat’s cheese salad found in every café in France ) but I think the flavours
were just perfect together, and the texture so good, it was worth noting down. I hope this recipe inspires you to go out and
make something crunchy and light, now that the weather is getting warm!
Apple, Walnut, Cheese and Honey Salad Recipe
Total Time:
approx. 15 minutes
Serves: 4-6
as a light dinner
Ingredients
1 red apple
(we used Ariane, but Macintosh, Gala, Pink Lady, Fuji , etc. would work too)
1 granny
smith apple (feel free to sub for this if you don’t like them, but I definitely
recommend having two different types of apple in this for some added variety)
1 cup
shelled walnuts
1 head red
lettuce
Handful of
swiss chard, or other spicy greens of your choice
Honey to
taste
Cheese to
taste – we used Boursin fig and three nut cheese, which was absolutely amazing,
but you could substitute for any number of other creamy, nutty, or more pungent
cheeses
Olive Oil
to taste
Salt and
pepper to taste
Rinse and slice the apples,
lettuce, and greens. Mix in a bowl with the walnuts, and top with crumbled cheese. Drizzle olive oil and honey over the top to
taste, and finish off with a bit of salt and pepper. Very nice with some fresh herb or nut bread!
