This recipe is so quick, easy, and delicious, I am stunned it took me so long to come up with it. We try to alternate speaking Japanese and French around the flat, and I find this makes me crave Japanese/French food, which is really a kind of bonus!
As devoted as I am to tofu, this makes a really nice, vegetably, protein rich dish, which everyone loved!
Easy Vegan Baked Teriyaki Edamame
Total time: 20 minutes
Serves: four
Ingredients:
4 cups frozen edamame
1 small onion, finely chopped
1 tbsp sugar
1 tbsp sesame seeds
1/2 tsp rice vinegar
1 tsp tamari
1tsp olive oil
Preheat the oven to 225C/425F.

Preheat the oven to 225C/425F.
In a bowl, combine all the ingredients and stir to coat the edamame and onion. Spread onto a non-stick baking pan (try to get them into a single layer), and drizzle over any remaining liquid.
Bake for 10-15 minutes, stirring every 5 minutes, until liquid has evaporated and edamame and onions are deep golden brown.
