Fudgy Vegan Chocolate Blueberry Brownies
I've been making these for nearly a year now, and they've become my go-to brownies...but I haven't posted them here because we always eat them all before we can take a picture! This past week I managed to remember to take a photo of the very last brownie before scarfing it down - I hope you like them just as much as I do!
Several people have assumed the blueberries were raspberries, so if you think blueberries and chocolate sound a bit weird, I'd urge you to give it a try - its a really nice combination.
Total time: 30 minutes
Serves: makes 8 - 10 brownies
125g (2/3 cup) sugar
1/2 - 1 cup (120ml - 240ml) almond milk
75g (1/4 cup) sunflower oil (yes, grams)
1 tsp vanilla
1/2 tsp coffee extract (optional)
4 tbsp cocoa powder
2 tsp baking powder
125g (1 cup) white flour
1 cup frozen blueberries
90g (1/2 cup) vegan chocolate chips
Preheat the oven to 180C/375F. Grease a 10x10 glass baking dish. In a large bowl, mix together the sugar, oil, extracts, and 120ml of almond milk. Sift in the flour, cocoa powder, and baking powder. Add more almond milk if necessary - aim for an easily pourable batter, like for a cupcake. Stir in the blueberries and chocolate chips. Pour into the baking dish and bake for 20 - 25 minutes, or until a toothpick comes out clean.
