Vegan Butter Pecan and Almond Chocolate Chip Cookies
These cookies are soft, chewy, and full of butter-pecan goodness...and super simple to make!
Total time: 20 minutes
Serves: makes about 12 cookies
Ingredients
1/3 stick (37g) vegan butter
1 1/2 cups (300g) dark brown sugar
1 tsp vanilla
80ml
1/2 tsp cinnamon (optional)
1 cup (125g) white flour
1/2 cup (60g) light brown flour
Pinch of salt
2 tsp baking powder
1/2 cup (80g) chopped almonds
1/3 cup (60g) chopped pecans
1/2 cup (80g) vegan chocolate chips
Preheat
the oven to 180C/375F. Melt the vegan butter and stir in the brown
sugar, followed by the vanilla and cinnamon. Whisk in the flours, salt
and baking powder. Add the nuts and chocolate chips - the dough should
be sticky and quite wet, but workable. Roll into balls, gently flatten
with your hand, and bake for 10-12 minutes, or until golden brown.
