Easy oat, nut, and chocolate chip cookies - Low FODMAP, Vegan, and Gluten Free
Perfect chewy texture, delicious taste, and suitable for the FODMAP elimination phase.

Serves: makes 6-8 cookies
Ingredients:
3/4 cup ground oats/oat flour
1/3 cup ground walnuts
1/3 cup light brown sugar
3 tbsp desiccated coconut pieces
1/2 tsp vanilla
1 tbsp rapeseed oil
1/2 tsp baking soda
1/4 tsp salt
2-4 tbsp water, as needed
1/4 cup chocolate chips/chunks
Preheat the oven to 180C/350F. In a bowl, combine all ingredients apart from the water and chocolate chips. Add the water 1 tbsp at a time until the mixture sticks together, then add the chocolate chips. Use about a heaped tablespoon of dough per cookie - these will spread a bit as they bake. Bake for 10 minutes, or until golden brown and no longer sticky to touch. Allow to cool slightly before enjoying!
