Vegan Peanut Butter and Chocolate Chip Banana Bread



I don't usually mess around with banana bread - I'm a bit of a purist that way.  This recipe, however, pretty much blew my mind.



You can't go wrong with peanut butter and chocolate in my book, and peanut butter, chocolate, and bananas go fantastically well together.  Alas, raw bananas give me a stomach ache, so banana splits and sundaes are out of the picture (unless you caramelise the bananas, which is always nice...).   This bread, however, redresses the imbalance!  

It's pretty filling, thanks to the peanut butter and brown flour (though you could certainly use white instead, if you really insist) and nice and fudgy - perfect for dessert with a tall glass of almond milk.  If you happened to have any vegan caramel chips, I'm sure they'd take this over the edge!


Vegan Peanut Butter and Chocolate Chip Banana Bread

Total time: 45 minutes
Serves: 4 - 6

Ingredients:
2 ripe bananas, mashed
1/2 cup (125g) peanut butter
2 tbsp coconut oil
1/2 tsp apple cider vinegar
3/4 cup (150g) sugar

1 cup (125g) light brown flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup (90g) chocolate chips

Preheat the oven to 180C/350F, and prepare a loaf pan for baking by oiling and flouring it, lightly.  Combine the wet ingredients in a large bowl, then add the flour, baking soda, and salt - when fully mixed, add the chocolate chips, and pour the batter into the loaf pan.  Bake for 30 minutes, or until nicely browned on top and a toothpick inserted into the center comes out clean.
