Vegan Peach and Grapefruit Bread



Saturday was the Vegan Festival here in Edinburgh, and I binged on cakes, cookies, ice cream, and candy!  I've been eating salads and drinking mint tea ever since...



After my sugar crash, I thought something sweet but filling and nutiritious would make a nice change...and we had a couple of tasty peaches on the counter, which were a bit lacking in texture, but not flavour so I thought a nice, light bread would be perfect for using them up!

This is an adaptation of Isa Does It's Lemon and Blueberry loaf, which is absolutely fantastic...you need a bit more flour here, because the peach and grapefruit are so juicy.  I really like the addition of almond extract, which brings out the peach flavour, but you can certainly substitute with vanilla, if you prefer!

Vegan Peach and Grapefruit Bread


Total time: 1 hour
Serves: 4 - 6

Ingredients

1 ripe peach, diced into small pieces
1/2 pink grapefruit, peeled and split into small pieces
1/2 cup (120ml) soy or almond milk
1 tsp apple cider vinegar
1/4 cup (60ml) sunflower oil
3/4 cup (150g) light brown sugar
1/2 tsp almond extract
2 1/4 cups (280g) white flour
2 tsp baking powder
1/2 tsp salt


Preheat oven to 180C/350F and prepare a loaf pan by oiling and flouring it lightly.  In a large mixing bowl, combine the peach, grapefruit, milk, vinegar, oil, sugar, and almond extract.  Then add the flour, baking powder and salt, and mix until just combined.  Pour into the loaf pan and bake for 30 minutes, or until nicely browned and a toothpick inserted into the center comes out clean.

Great hot, but especially good cold!
