Vegan Olive Oil Orange Muffins
David Lebovitz recently posted a recipe for some amazing olive oil muffins on his blog...so obviously I had to veganize them!
These are the adjustments I made; check out his blog for the original recipe and instructions.
First, I only used 120ml of olive oil, and added extra water up to a total of 230ml.
Instead of 185g white flour, I used 100g light brown flour and 85g white flour - the light brown seems to help things hold together better without egg.
No need to substitute for the egg.
Mine were also done in 25 minutes, so keep an eye on them.
