Fudgy Vegan Brownies

Finally - truly decadent, properly fudgy vegan brownies!!




Fudgy Vegan Brownies

Total time: 25 minutes

Ingredients:
1 1/4 cup light brown sugar
200g full-fat coconut milk
1 tsp vanilla
1/2 tsp chocolate extract (optional)
1/2 cup cocoa powder
50g melted chocolate
1 cup flour
1 tsp apple cider vinegar
1 tsp baking powder
1/4 tsp salt
Extra 50g choc chips (optional)

Preheat your oven to 180C/350F.  Start by measuring out 200g of coconut milk - first, spoon all of the coconut cream into your bowl, then top up with coconut milk until you hit 200g.  Stir in the remaining wet ingredients, then sift in the dry ingredients and mix until just combined.  Add chocolate chips, if using.  Grease a 9x9 glass baking dish.  Instead of flouring it, use regular granulated/caster sugar to get crispy edges.  Pour in the brownie mixture and bake for 15 minutes, or until just barely jiggly in the centre.  Let these cool as much as you can bear to, before digging in!
