Vegan Granola Bread

Vegan granola bread

A simple base - add your favourite granola, try mixing in additional fruit, nuts, or whatever you fancy.

Serves: 4 - 6


1 1/2 cups flour
1 1/2 cups granola
1 cup sugar
1 tsp vanilla
1/4 tsp salt
1 tsp baking powder
2 tbsp oil
1/4 cup soy milk (or as needed)

Preheat your oven to 180C/350F.  In a large mixing bowl, whisk together the dry ingredients (apart from the granola).  Add the remaining ingredients and stir to combine; add more soy milk if needed to get the batter to a standard cake batter consistency.  Oil and flour a loaf pan, and pour the mixture in, topping with additional nuts/seeds/granola/chocolate chips as desired.  Bake for 30 minutes or until the loaf passes the toothpick test.
