Vegan Sweet Potato and Red Pepper Pasta with Houmous
This incredibly easy, remarkably tasty dish got me through my PhD...I can't believe I haven't posted it sooner!

1 sweet potato
1 red bell pepper, chopped into pieces approx. 1 inch long
1/2 onion, diced
2 tsp olive oil
1 tub plain houmous
2 tsp balsamic vinegar
3 tbsp nutritional yeast
salt and pepper to taste
First, peel and grate the sweet potato. Then, sauté the onion in the olive oil until golden; add the sweet potato and red pepper, and continue cooking for another 8 minutes or so, until all three vegetables are caramelising and soft. While vegetables are cooking, start the pasta. When the vegetables are done cooking, add the nutritional yeast and balsamic vinegar to the pan and stir to combine. Turn off the heat and set aside. When the pasta is ready, drain, then add the pasta, houmous, and reserved vegetable mixture to a large bowl, and mix thoroughly. Season to taste, and serve.
