Hot Maple Pecan Cinnamon Roll Smoothie - Vegan, Gluten Free, Low FODMAP Breakfast




A warming and cozy breakfast for the winter - suitable for the FODMAP elimination phase.

Total Time: 10 mins
Serves: makes enough for one large breakfast portion or two snacks

Ingredients:
75g oats
150ml water
Pinch salt

25g pecans
75g coconut yogurt
40g maple syrup (or more to taste)
1 tsp vanilla
300ml hot almond milk
1 1/2 tsp ground cinnamon
Pinch nutmeg
Pinch orange zest (optional)

To keep this smoothie nice and hot on a cold winter morning, add the pecans, yogurt, maple syrup, vanilla, cinnamon, nutmeg, and orange zest to the blender first. Then, heat the almond milk on the stove or in the microwave until piping hot, but be sure to take it off the heat before it scalds.  Meanwhile, combine the oats, salt, and water in a microwave safe bowl and microwave on high for 2-3 minutes, stirring every minute or so, until it has become a sticky oatmeal.  Add the oatmeal and hot almond milk to the blender and blend till smooth, then taste to see if it needs more maple syrup or cinnamon.  Serve hot right away, or enjoy warm.
